Description

Embark on a culinary journey that unfolds in the slow cooker with our Slow Cooker Brisket with Melty Onions and Chimichurri – a tantalizing medley of flavors and textures that transforms a humble cut of meat into a melt-in-your-mouth masterpiece. This recipe is not just about convenience; it’s a celebration of patience and the art of slow-cooking that yields a brisket so tender, it practically falls apart, accompanied by a symphony of sweet, savory onions, and a vibrant chimichurri sauce.

The star of this dish is the beef brisket – a tough cut that, with the magic of slow-cooking, becomes a succulent and flavorful revelation. Rubbed with a harmonious blend of spices, the brisket is seared to perfection, sealing in its natural juices and infusing it with a deep, smoky essence.

Nestled in the slow cooker, the brisket becomes the canvas upon which the culinary masterpiece will unfold. Sliced onions, caramelized to a golden sweetness, are scattered around the beef, promising to impart a luscious depth of flavor during the unhurried cooking process.

As the brisket simmers and tenderizes over the hours, the onions transform into a melty, savory confit that envelops the meat in a rich, succulent embrace. The slow cooker becomes an alchemical cauldron, coaxing out the robust flavors of the brisket and melding them with the sweet essence of the onions.

But the grand finale is the chimichurri sauce – a verdant, herb-infused condiment that adds a burst of freshness and a zesty kick to cut through the richness of the meat. Parsley, cilantro, garlic, and red pepper flakes dance together in a tangy, herbaceous symphony, creating a sauce that is as vibrant in color as it is in flavor.

To serve, the slow-cooked brisket is pulled apart effortlessly, revealing its fork-tender texture. A generous ladle of melty onions drapes over each portion, and a vibrant dollop of chimichurri crowns the masterpiece, offering a visual spectacle and a burst of flavor that elevates the dish to gourmet heights.

Whether served over a bed of creamy mashed potatoes, nestled in warm tortillas, or accompanied by crusty bread to mop up the savory juices, this Slow Cooker Brisket with Melty Onions and Chimichurri is an ode to the art of slow-cooking and the joy that unfolds when patience meets culinary finesse. Prepare to savor the essence of time and flavor in each delectable bite, as the melding of brisket, melty onions, and chimichurri creates a sensory experience that lingers on the palate, leaving you with a newfound appreciation for the magic of slow-cooked perfection.

Ingredients

Brisket

  • 3 Tbsp olive oil
  • 5 to 5 1/2 lb brisket, trimmed
  • 1 Tbsp. plus 1 tsp kosher salt, divided
  • 1 1/2 tsp ground black pepper, divided
  • 4 large red onions, cut into 1/2-inch-thick slices
  • 1 cup dry red wine (kosher if desired)

Chimichurri

  • 1 1/2 cups fresh flat-leaf parsley leaves, chopped, plus more for serving
  • 3/4 cup olive oil
  • 2 Tbsp prepared white horseradish
  • 1/2 tsp lemon zest, plus 1 Tbsp. fresh juice (from 1 lemon)
  • 1/2 tsp kosher salt
  • 1/8 tsp ground black pepper

Directions

  1. Make the brisket: Heat oil in a large skillet over medium-high. Sprinkle brisket with 1 tablespoon salt and 1 teaspoon pepper. Place in hot oil and cook until browned on both sides, about 6 minutes per side. Transfer to a 6-to-8-quart slow cooker.

  2. Add onions remaining 1 teaspoon salt and 1/2 teaspoon pepper to skillet. Cook over medium until onions are starting to wilt, about 5 minutes. Stir in wine; cook, scraping up browned bits from the bottom of the skillet, for 2 minutes. Transfer onions to a slow cooker. Add 1 cup water. Cover and cook until brisket is fork-tender, on low for 8 to 9 hours or on high for 6 hours.

  3. Make the chimichurri: Stir together parsley, oil, horseradish, lemon zest juice, salt, and pepper in a medium bowl. Refrigerate until ready to serve.

  4. Slice brisket against the grain. Top with onions, braising liquid, and parsley. Serve with chimichurri.
